About the Region:
Rías Baixas, located in Galicia in northwestern Spain, is one of the most important white wine regions in the country. Influenced by the Atlantic Ocean, it has a cool, maritime climate with high rainfall and humidity, ideal for preserving freshness and aromatic intensity in grapes. The soils are typically granite-based with sandy topsoil, providing excellent drainage and contributing to the wines’ mineral character. The subzone of O Rosal, where Lagar de Cervera is based, produces some of the most expressive and elegant Albariños.

About the Grape Variety:
Albariño is a native white grape of Galicia, celebrated for its vibrant acidity, aromatic intensity, and mineral-driven freshness. Naturally resistant to fungal diseases (important in humid climates), it offers flavors of stone fruit (peach, apricot), citrus (lime, grapefruit), and often a saline or sea spray note. It thrives in the Atlantic-influenced Rías Baixas region and is widely considered Spain's top white varietal.

Vinification Process:
Grapes for Lagar de Cervera 2023 are hand-harvested at peak ripeness. They undergo gentle pressing under inert conditions to avoid oxidation and retain freshness. The must is fermented in stainless steel tanks at low temperatures (~15 °C) to preserve primary aromas. Malolactic fermentation is avoided to maintain bright acidity. The wine is then aged briefly on its fine lees with periodic stirring (bâtonnage), enhancing texture and complexity without oak influence.

Style and Tasting Notes:
Color: Bright, pale yellow with greenish reflections.

Aroma: Intense nose of ripe citrus, pear, green apple, apricot, and a touch of white flowers and wet stone minerality.

Palate: Crisp and lively with zesty acidity, medium body, and layered fruit. Finishes with a refreshing saline and mineral edge, reflecting the coastal terroir.

Food Pairing:
Perfect with seafood of all kinds:

Oysters, clams, and mussels

Grilled prawns or calamari

Ceviche and sushi
Also excellent with light salads, goat cheese, Thai or Vietnamese dishes, or as a sophisticated aperitif.

Trivia:
Lagar de Cervera is owned by the prestigious La Rioja Alta group, known for its top-tier red wines from Rioja.

Though Albariño is native to Galicia, it has seen rising popularity globally—especially in the U.S. and Australia, where it's grown in cool coastal areas.

“Lagar” means "wine press" in Spanish, referencing the traditional winemaking equipment once used in the region.
